How it's decaffeinated
This coffee uses the E.A. method, a natural process that preserves the coffee's integrity. Green, unroasted beans are soaked in a solution of water and Ethyl Acetate, a compound derived from sugar cane molasses through fermentation, the same natural process used to make rum. Ethyl Acetate occurs naturally in fruits like pineapple, berries, apples, and pears, and is widely used in food for its fruity notes. The solution bonds to the caffeine and draws it out of the bean, which is then steamed to remove any residual E.A., leaving a clean, flavorful decaf.
